Clean label started as a marketing preference; today it is a condition of shelf presence for most snack manufacturers. The real issue is not what is removed from the label but how the gap that removal leaves on the tongue is filled.
In a seasoning brief, the sentence "we do not want E numbers" is rarely the manufacturer's own idea any more. Behind it stands either a retail chain's private-label specification, or an export customer's label expectation in their own market, or the silent pressure of consumers who turn the pack over and read the back. The demand comes from above; by the time it reaches the formulation table it has become a technical problem — and stating that constraint clearly in the brief from the outset is the first step that makes the job easier.
Whose demand is clean label?
The most visible source of the demand is the private-label specifications of retail chains. Those specifications often impose not individual items but a category logic: "we do not want any ingredient that would not be found in a consumer's kitchen." The second source is export. A manufacturer selling the same seasoning to Germany, the Gulf and the Balkans has to look separately at each market's regulation and its retail habits. The third is consumer perception — and here the gap between scientific reality and perception does not concern us, because perception is what decides the shelf.
The practical consequence: you end up managing two or three versions of the same product. A standard domestic line, a clean-label line, an allergen-free line. Formulation decisions have to be taken with that multiplicity in mind; chasing a single "ideal" formulation is a waste of time.
What does MSG actually do in a seasoning?
Dismissing MSG as a "flavour enhancer" misses the point. In a seasoning it does two separate jobs. The first is umami: a saturated, "meaty" taste signal on the tongue, independent of saltiness. The second, and the less discussed, is body. It builds a floor on which the aromatic notes can sit, extends how long the taste stays in the mouth, and stops the volatile notes from standing alone. And because it raises the perception of salt, it lets you work with less sodium at the same perceived saltiness.
What you lose when you take MSG out is not "a bit of flavour". The middle section of the taste collapses. The top notes — spice, roasted, acidic — stay where they were, but there is no wall behind them to lean on. The product feels familiar on the first bite and empties out on the third chew. In sensory evaluation this picture is usually described in a single sentence: there is taste, but nothing behind it.

The tools for filling the gap
There is no single substitute for bringing back umami and body; you use several tools, layer by layer. Each has its own taste signature and its own limit.
- Yeast extract: the closest functional equivalent. It brings back umami and body, but it also carries a slight yeasty-meaty note with it. In neutral seasonings that note sticks out; in roasted and spicy profiles it hides. An important warning: yeast extract carries naturally occurring free glutamate, and some retail specifications treat it as an MSG equivalent and reject it. Reading the target specification's definition of "flavour enhancer" before you put it into the formulation is essential if you do not want to have to backtrack.
- Mushroom and tomato concentrate: they work as natural glutamate sources, and appear on the label under a name the consumer recognises. In return they bring colour and acidity; in light-coloured powders and sweet-savoury profiles the dosage ceiling arrives quickly.
- Sea salt and the salt-spice balance: changing the grain structure and distribution of the salt produces a higher perception of saltiness from the same sodium. On its own this is not enough without re-tuning the dosage of strong spices such as black pepper, cumin and garlic.
- Roasted and Maillard-derived notes: roasted onion, roasted wheat and caramelised milk notes feed the body directly. If there is an allergen constraint, part of this family is already off the table.
- Rebuilding the acid-salt balance: once MSG is gone, the perceived hardness of the acid increases. Bringing citric acid down a notch usually becomes necessary. Partial substitution can also be tried; but malic acid gives a sourness that rises later and lingers longer in the mouth, which is to say it takes off the hardness while extending the tail. The sensory consequence of that change should not be decided without measuring it on the product itself.
None of these tools replaces MSG on its own. The approach that works is to divide the lost body into three and win it back from three different places: part of it from the yeast/mushroom side, part from a roasted note, part by rebuilding the salt and acid balance.
The creaminess that disappears with the allergens
There is a heading harder than MSG: allergens. In a seasoning, milk, gluten and soy are not just a label line; they are the carriers of mouthfeel. Milk powder and cheese powder deliver creaminess, the sense of a fatty coating and the way the taste clings to the tongue. Wheat-based carriers determine the flowability of the powder and how it adheres to the crisp. Soy supports both umami on the hydrolysed protein side and texture on the emulsification side.
Take those out and the seasoning technically works but comes across as "thin" in the mouth. On the compensation side there are tools such as starch- and maltodextrin-based carriers, vegetable fat powders, rice and maize derivatives, and pea protein. Part of the creaminess comes back. Not all of it. It is hard to claim today that plant-based alternatives reproduce the coating sensation milk fat leaves in the mouth one for one; a brief that claims they do is worth approaching with caution.
The gluten-free side is more manageable; the real risk lies not in formulation but in production. If wheat-based product also runs on the same line, the cleaning protocol and cross-contamination control become more critical than the formulation. Behind a seasoning that says "gluten-free" on the label there is as much line discipline as there is formulation.
Let us talk about the price
Clean label is not free. You pay for it in two places. The first is dosage. When you try to do with yeast extract, concentrates and roasted notes the job MSG did by weight, the total seasoning dosage rises — the amount of powder adhering to the crisp increases, which affects the coating setting and the product cost. The second is raw material cost. Natural umami sources, allergen-free carriers and certified gluten-free raw materials are more expensive than their standard alternatives, and their supply chains are more fragile.
That is why the clean-label decision should be taken not at the formulation table but at the product strategy table. Which SKU can carry this cost? Which market genuinely rewards this label? If the answer is not "yes" for every product, splitting the line in two is usually smarter than trying to make one formulation do everything.
Where to start
The first job is to map the loss. Take the MSG version of the existing product as reference; write out its taste profile note by note: where umami rises, how many seconds the body stays in the mouth, at which point salt and acid come in. Then taste the same product side by side with an MSG-free control formulation. Once you have marked the note that weakens and the moment it weakens, where the compensation has to come from becomes self-evident — and you make that compensation by looking at the map, not by eye.
Drawing that map takes an afternoon; not drawing it costs you three or four failed trials made without understanding where the loss came from. Treating a constrained formulation not as a separate product but as a version of the same formulation under different constraints lowers both the development time and the number of revision rounds.
